Swedish Meatballs & Mushroom Pizza
Servings: 4
Ingredients
Use store-bought French Bread or make your own dough
For the dough:
1 1/4 cups lukewarm water
1 tsp. honey
0.7 oz. fresh yeast
18 oz. wheat flour or pizza flour
1 tsp. salt
2 tbsp. olive oil
For the topping:
3/4 lb. Swedish Meatball Mix from Anoka Meat & Sausage
8 oz. white mushrooms, sliced thin
1/4 cup garlic butter (see Teena’s recipe for French Bread Pizza)
2-3 tbsp. olive oil
1/2 cup pizza sauce sauce
8 oz. shredded mozzarella
Bread & Butter Pickles
Lingonberry Jam
Fresh Dill
Steps
If you're not using the French Bread recipe, you can make your own dough:
Mix the lukewarm water with the honey and yeast until the yeast has dissolved completely. Add the flour to a large bowl, make a depression in the middle and fill with the yeast water. Mix with some of the flour from the sides, then cover and let rise for about 30-45 minutes.
Add salt and oil to the bowl and mix everything with your hands, then transfer to a floured surface and knead for about 5-6 minutes until you get a nice smooth dough. If the dough is too sticky, add some flour. If the dough is too dry, add some more water. The dough should be soft but not sticking to your hands. Form a ball and place in a lightly oiled bowl, cover, and let rise in a warm place for about 30-45 minutes or until almost doubled in size.
While the dough is rising, preheat the oven and baking sheet to 425 F.
Make small meatballs with the Swedish Meatball Mix, shaped into small balls about 1” in size.
Place them into the preheated oven on a baking sheet for 10 minutes to cook. Remove and let cool.
Clean the mushrooms and cut them into slices.
Remove the dough from the bowl and knead another 6-8 minutes on a floured surface. Cut into four pieces (cover two of them for later use) and roll out two dough pieces. Place on parchment paper on a baking sheet, coat with garlic butter, and bake for 5 minutes.
To assemble: Spread half of the tomato sauce on top (leave the edge free of sauce), place sliced mushrooms and bread and butter pickles sparingly on the bottom (first), then sprinkle the cooked meatballs over the top. Top with half of the grated mozzarella.
Bake for about 18-20 minutes for fresh dough, 10-15 minutes for the French Bread method. The mozzarella should have a nice color and look bubbly. While the first two pizzas are baking, prepare the two others.
Serve hot, topped with lingonberry jam and fresh dill.
Notes
If you like to make one big pizza, just roll out all of the dough at once and use the toppings as described to get one large delicious pizza for many people.
