Surf & Turf, Filet Mignon + Shrimp + Scallops + Lobster all on Fox 9 Good Day!

How to Make


Servings: 2

Ingredients

  • For the mashed potatoes:

  • 1 large russet potato, peeled then chopped

  • 2 Tablespoons butter

  • 1 Tablespoon milk or cream

  • Kosher salt, and pepper to taste


  • For the steak and pan sauce:

  • 2, 8oz filet mignon steaks,

  • From Anoka Meat & Sausage cut 3” thick

  • 3/4 Tablespoon Livia’s seasoning salt

  • 1-1/2 teaspoons black pepper

  • extra virgin olive oil


  • For the scallops:

  • 1/2# Bay Scallops ($10 package from Anoka Meats), thawed

  • salt and pepper

  • 1 Tablespoon extra virgin olive oil

  • 1 Tablespoon butter


  • For shrimp:

  • 12 oz raw shrimp ($10.99 bag at Anoka Meats), thawed

  • 1 Tblsp Butter

  • 1 Tblsp minced onion

  • 1 Tblsp minced garlic

  • 1/4 cup white cooking wine

  • 1 Tblsp lemon juice


Steps

  1. Place steak on a plate on the counter to warm up for about 20 minutes before starting to cook. Preheat oven to 400 degrees. Add potatoes to a large pot filled with cold water then bring to a boil and cook until tender. Drain then mash potatoes with butter, milk, and salt and then set aside.

  2. For the steak: drizzle with olive oil and Livea's season salt, then repeat on the other side.

  3. Heat a large, oven-safe cast iron or heavy-bottomed skillet over medium-high heat then add 1 Tablespoon olive oil & butter. Once melted add steaks then sear until steaks have formed a golden brown crust on the bottom, 2 minutes. Flip steaks then place entire skillet into oven and roast for 10 minutes for medium (adjust roasting time up or down depending on how thick your steaks are - ours were 3” thick.) Remove steaks to a plate then tent a piece of foil on top and set aside to rest.

  4. Place skillet back over medium-high heat then add onion and garlic, saute for 30 seconds. Add shrimp, wine and lemon juice, simmer until wine is reduced by half, and then add beef broth and simmer until reduced, about 7-9 minutes. Add remaining Tablespoon butter, taste and add salt and pepper if necessary, and then set sauce aside.

  5. For the scallops: While the pan sauce is reducing, melt butter and extra virgin olive oil in a large skillet over medium-high heat. Pat scallops dry between layers of paper towel, season with salt and pepper, and then place seasoned side down in hot skillet and sear for 90 seconds. Season tops with salt and pepper then flip and sear for 90 more seconds.

  6. Scoop mashed potatoes onto plates then add steaks and scallops.

Notes

  • If Making 4 oz lobster tails in the oven, butterflying them and baking at high heat (400°F–425°F) for roughly 10–12 minutes. The goal is to keep the meat tender and juicy by not overcooking them, targeting an internal temperature of 135°F–140°F.

  • Ingredients

  • 2 lobster tails (4 oz each), fully thawed, available from AMS

  • 4 tbsp unsalted butter, melted

  • 1–2 cloves garlic, minced

  • 1 tbsp fresh parsley, chopped

  • 1 tsp lemon juice, plus wedges for serving

  • 1/2 tsp smoked paprika (optional)

  • Salt and black pepper to taste
