FARMERS MARKET SALAD:
This salad is inspired by the Anoka Farmers Market that’s bigger and better than ever before! be sure to stop by on Wednesdays 3-6 pm for all kinds of fun finds!

Servings: 6
Ingredients
6 medium ears sweet corn
3 tablespoons butter, melted
1/2 cup chopped cucumber
1/2 cup frozen baby lima beans thawed
1/2 cup julienned radishes
2 Tablespoons diced red onion
1/4 cup fresh basil leaves, thinly sliced
dressing:
1/4 cup olive oil
3 tablespoons cooking sherry
11/2 tablespoon white balsamic vinegar
1/2 teaspoon kosher salt
1/2 teaspoon pepper
Steps
Brush corn with butter. Grill corn, covered, over medium heat for 10 minutes or until lightly browned, turning and basting occasionally.
Cut corn from cobs; transfer to a large bowl. Add vegetables and basil. In a small bowl, whisk dressing ingredients. Pour over vegetables; toss to coat.

Thick Cut Coffee Crusted Pork Chops

Ingredients
4 Thick Cut Bone-In Pork Chops from Anoka Meats
2 tablespoons finely ground coffee (or instant espresso)
2 tablespoons brown sugar
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
Steps
Grill thick-cut pork chops at a medium-high heat (400°F to 450°F). This creates a crisp, caramelized crust on the outside while keeping the thick center juicy.
Use a Two-Zone Grilling Method because thick chops take longer to cook, searing them over high heat the entire time will burn the outside before the center is done. Use these specific steps for the best results:
Create two heat zones on your grill. One side should be hot (direct heat) for searing, and the other side cooler (indirect heat) for gentle cooking.
Place the seasoned pork chops on the direct-heat side for 4 minutes per side to get good grill marks and a rich crust.
Move the chops to the indirect-heat side, close the lid, and cook for another 15 to 20 minutes until internal temperature reaches 140° F.
Rest for 5 minutes for temperature to reach 145° F. before serving.
