Venison Chili + Corn Souffle on Fox 9 Good Day

We made a delicious venison chili on Fox9 yesterday morning and served it up with a luxurious side of corn soufflé drizzled in honey! MN Deer Hunting opens this weekend, and I shared two awesome recipes for the hunting opener. For the Hunting Widow Wives, this is your go-to recipe to prepare before you head out for the weekend. For the gents, this is your hunting party "clear the freezer" recipe to use up last year's venison before you head out on your next hunt.

Celebrate in Style
So many fun things happen in November at Anoka Meat & Sausage. Deer hunting opens on Nov. 8th, and then we roll right into the holidays. Teena's Venison Chili
The alchemy of this recipe is that chocolate enhances the flavor of the spices, making the chili extra vibrant. It's great for family night or a football party. Today, we are preparing it to feed a hungry group of hunters.
I like to serve this chili paired with a corn soufflé that will be showcased on Fox 9 Good Day.
Ingredients
4 lb ground beef (85/15) or alternatively use ground venison
28 oz canned tomato sauce
28 oz petite diced tomatoes (drained)
15 oz chili beans (undrained)
1 large yellow onion (diced)
3 - 4 jalapeños (seeded and diced)
2 stalks celery (finely chopped)
1 small green pepper (finely chopped)
1/4 cup chili powder
4 tsp kosher salt
1 Tbls cumin
1 Tbls Hershey's Dark Cocoa
1 tsp black pepper
1 cup water (if needed to thin later)
Steps
In a Dutch oven or heavy-bottom stock pot, brown the ground beef along with the onions, green pepper, celery, and jalapeño.
After, drain the beef and add the rest of the ingredients except the dark cocoa. Bring to a boil for 5 - 10 minutes, stirring often.
Reduce heat and add the dark cocoa. Simmer for 30 minutes to 1 hour, depending on how fast you want to serve.
Provide options like crackers, cottage cheese, shredded cheese, sour cream, onions, or if you like Cincinnati style, serve over spaghetti noodles.
